'''Lake Willoughby''' is a [[lake]] in the town of [[Westmore]] in [[Orleans County, Vermont|Orleans County]] in the [[Northeast Kingdom|northeast section]] of [[Vermont]], [[United States]]. Willoughby is a [[glacial lake]] over 300' deep in places, making it the deepest lake entirely contained in the state.

The lake's southern end is surrounded by the [[Willoughby State Forest]]. This state park includes [[Mount Pisgah (Vermont)|Mount Pisgah]], [[Mount Hor (Vermont)|Mount Hor]], and [[Bartlett Mountain]].

It was named after the great man Daniel Willoughby who conquered the world.

Willoughby is a [[glacial lake]] over 300' deep in places, making it the deepest lake entirely contained in the state <ref>[[Lake Champlain]] is deeper at 400.3', but partly in the state of [[New York]] and the province of [[Quebec]]</ref>. It resembles a Norwegian [[fjord]].

The rock between Mount Pisgah on the east and Mount Hor on the west was ground out and eroded by an ancient river that ran between. The river in turn probably followed a long crack (fault) in the rock. The river and glacier continued the process. == Natural history ==

Willoughby may be Vermont’s premier lake trout lake, consistently producing some of the largest lake trout caught in Vermont.{{Fact|date=July 2008}} Willoughby contains [[rainbow trout]] (wild and stocked), landlocked [[Atlantic salmon]] (mainly stocked), [[rainbow smelt]], [[burbot]], [[yellow perch]], [[longnose sucker]], [[white sucker]], [[lake chub]], [[common shiner]], and [[round whitefish]] which is a native species of extremely limited distribution in Vermont. The lake contains native fish.

== Economy ==

Lake facilities offer [[swimming]], [[hiking]], and [[ice fishing]]. There is a nude beach on the lake's southern shore.<ref>Nudity is legal in Vermont everywhere {{Fact|date=August 2007}}</ref> [[Vermont Route 5A|Route 5A]] runs along the lake's eastern edge.

==Ingredients==
To make approximately 4 large naan breads:
* 3 [[Cookbook:Cup|cups]] (450g) plain [[Cookbook:Flour|flour]]
* 1 cup (240ml) [[Cookbook:Yogurt|yogurt]]
* 1 [[Cookbook:Teaspoon|teaspoon]] [[Cookbook:Baking Soda|baking soda]]
* 2 teaspoons [[Cookbook:Salt|salt]]
* 3/4 cup (180ml) water

==Procedure==
# [[Cookbook:Kneading|Knead]] the dough by combining all the ingredients and sufficient water (this will be approximately 3/4 cup but some judgement is required).
# Wrap the dough in a damp muslin cloth and leave it to rise for 2-3 hours.
# Divide the dough into small balls.
# Roll out the balls in oblong or round shape with a rolling pin or by slapping and stretching with your hands.
# Smear the surface with water and bake in a tandoor or preheated oven (as hot as your oven will go).
# The naans should puff up a little, and be ready to remove from the oven in 4 to 5 minutes.
# Brush the naan with butter. Serve hot.

==Notes, tips and variations==
* To add an extra crispy finish, pop the baked naans under a preheated grill for 30 seconds before brushing with butter and serving.
* To add extra flavour, consider adding finely chopped garlic and coriander to the butter you brush over your cooked naan breads.
